I love avocado toast. There, I’ve said it. Yup, I moved to California 20 years ago, was immediately introduced to avocados (they are everywhere) and slowly started to incorporate them into everything from sandwiches, to avocado tacos, to smoothies and salads like my prawn, mango, avocado salad stacks, and yes, my breakfast. When I smash avocados and spread on a crusty piece of bread, I’m happy. How I decide to “decorate” my avocado toast, becomes a joyful and fun event every morning. This everything bagel avocado toast with pomegranate is one of my favorites. Yes, it introduces other things like micro-greens and pomegranate seeds to the mix, and yes, often people think of those as “California Ingredients”, but this combination is delish!

Pro Tips for making avocado toasts
There is nothing difficult about making this recipe and the possibilities are endless. My tips include:
- Using the best ingredients possible and making sure your avocado is ripe and soft.
- Let’s talk bread. I watch my caloric intake and really don’t eat a ton of bread, but when I do, I make sure it is a high quality, crusty and flavorful bread. Sour dough, a crusty French loaf and/or the heavily seeded rye loaf I used here are all good choices.
- Use a great bread and cut a slice that is thick. I like my bread toasted for extra crunch, but that is a personal preference. You can decide for yourself.
Toppings for Everything Bagel Avocado Toast
- When it comes to the toppings I chose here, I went with one of my favorite seasonings, Everything Bagel Seasoning PLUS, micro-greens I grow myself at home with a Hamama micro greens kit, pomegranate seeds for a fresh pop of flavor, and some flaky salt (Maldon is a favorite) to bring it all together. You can use store-bought Everything but the Bagel Seasoning, but in my version I add good for you seeds (hemp, flax and chia) for an extra nutritional boost. You can use any micro greens you like (there are wide assortments at the supermarket, Whole Foods and Trader Joe’s).
- The fun pomegranate glaze is easy to make with pomegranate flavored balsamic vinegar and a little sugar. Note, if you don’t have pomegranate flavored balsamic, use regular. It will work just fine. If you are looking for a short cut, you can buy balsamic glaze in the condiment isle at that grocery store. I finish the dish with some chopped green onion for even more flavor.

Wait, you don’t like some or all of these ingredients? Don’t worry, you won’t hurt my feelings if you want to change things up.
Try any of these combinations or come up with some of your own.
- Avocado Toast with tomato is one of my favorites. Sometimes I just slice the tomato and place on top of the avocado toast. Other times, I chop the tomatoes or use tomato salsa and top the toast. Everyone likes avocado and tomato on toast, so you could just finish with some flaky salt and freshly ground black pepper and call it a day.
- I also like avocado toast with scrambled egg (YUM!). I just pile it on top of the avocado and finish with salt and pepper. Adding a little salsa works too! Try my scrambled pesto eggs on toast for a nice twist.
- Topping your toast with feta cheese, chopped tomato and cucumber and a drizzle of olive oil and balsamic vinegar is another favorite.
How I like to prepare and use avocados
When it comes to the avocado, I really like them ripe and soft so I can smash them. I prefer a smashed avocado on toast recipe over a sliced avocado toast. It is just a texture preference for me. If you prefer to slice the avocado, go right ahead. FYI: I also like to smash avocado and season it with salt and pepper and use it in lieu of mayo on sandwiches. You get all that creaminess we crave, but a ton of good-for-you fats and added nutritional value too.

How to make everything bagel avocado toast with pomegranate
This is a no-cook recipe and assembling the toast couldn’t be easier.
- Pull all your ingredients together. Make your balsamic glaze and smash your avocado and season it.

Everything Bagel Avocado Toast with Pomegranate

Ingredients
- 2 Slices of Crusty bread, toasted
- 1 Avocado, ripe
- 1 Green onion, thinly sliced
- 1 Tbsp. Everything bagel seasoning (or my PLUS version)
- 1/4 Cup Pomegranate Balsamic Vinegar (or plain balsamic vinegar)
- 1/2 Tsp. Sugar
- 2 Tbsp. Pomegranate Seeds
- Kosher Salt and Freshly Ground black pepper, to taste
- Flaky salt to finish (optional)
Instructions
- Toast your bread.
- Remove the avocado flesh and put into a bowl. Sprinkle with kosher salt and freshly ground black pepper. Smash with a fork to get a creamy texture with some small chunks of avocado.
- Heat the pomegranate balsamic vinegar with the sugar in a small pot on the stove over medium heat until it boils. Let it reduce until it is about 1 1/2 – 2 tablespoons and a thick glaze. (Regular balsamic vinegar works just fine in this dish.)
- Assemble your toasts by smearing half of the avocado mixture over each slice of toast. Drizzle the balsamic glaze over each piece of toast. Sprinkle with the everything bagel seasoning and the green onions. Finish by adding the pomegranate seeds and a pinch of flaky salt. Enjoy.
