  • Bring to a boil and gently smash the peaches with the back of a big spoon against the side of the pot. This helps release the peach juices and creates a more concentrated flavor. Once the peaches are soft and fragrant, turn off the heat and let steep for 20 minutes.

Note: If you are making your own simple syrup, add one cup of sugar or sugar substitute with 1 ½ cups of water to the pot. Stir over medium high heat until the sugar dissolves. Add the peaches and basil and continue with the rest of the recipe.

Frequently Asked Questions

To make basic simple syrup, combine equal parts sugar and water in a saucepan. Heat over medium heat, stirring until the sugar completely dissolves. Remove from heat and let cool before using.
Absolutely! Use your preferred sugar substitute like erythritol, stevia, or monk fruit sweetener. Follow the same process as regular simple syrup, but you may need to adjust the ratios based on your sweetener’s concentration.
Yes! This recipe scales beautifully. Simply multiply all ingredients proportionally. For parties, you can make large batches of both the tea and peach syrup ahead of time, then let guests customize their drinks with sparkling water.
The peach iced tea syrup will keep in the refrigerator for up to two weeks when stored in an airtight container.
Yes, frozen peaches work well. Thaw them first and drain any excess liquid before using in the recipe.
Any ripe, fragrant peach will work beautifully. Freestone peaches are easier to work with, but clingstone varieties taste just as delicious.
While basil adds a lovely herbal note, you can omit it or substitute with mint for a different flavor profile.
When made with sugar-free simple syrup, this unsweetened peach iced tea is much lower in sugar than traditional versions, but always consult with your healthcare provider about dietary choices.
Fresh-brewed tea tastes best, but unsweetened bottled green tea can work in a pinch. Just make sure it’s plain and unsweetened.

Ingredients

  • 2 - 3 Fresh peaches
  • 3 cup Lakanto sugar free simple syrup OR homemade simple syrup
  • 3 Green tea bags
  • 4 Sprigs fresh basil (divided)
  • 8 Oz Lemonade sparkling water, sugar free lemonade, diet lemon-lime soda, club soda or plain sparkling water

Instructions

  • Boil 3 cups of water.  Add tea bags, turn off the heat and let the tea bags steep for 15 minutes.  Then, remove tea bags and place cooled tea in a pitcher and chill for at least two hours.
  • Chop the peaches and add to a small pot with one cup of Lakanto’s simple syrup, ½ cup water and two sprigs of fresh basil.  Bring to a boil and gently smash the peaches with the back of a big spoon against the side of the pot.  Once the peaches are soft, turn off the heat and let steep 20 minutes.  Note:  If you are making your own simple syrup, add one cup of sugar or sugar substitute with 1 ½ cups of water to the pot.  Stir over medium high heat until the sugar dissolves.  Add the peaches and basil and continue with the rest of the recipe.
  • Strain the peach and basil mixture through a fine mesh strainer into a wide mouthed jar. Press down to remove all the syrup.  Discard the solids.   Chill the peach syrup for up to two weeks in the fridge.
  • To make your drink, fill two 18-ounce tall glasses with ice.  Add 1/4 cup of the green tea and 1/4 cup of the peach syrup.  Top each with about 4 ounces of lemon-lime sparkling water, club soda or plain sparkling water or carbonated beverage of choice. Garnish with a sprig of fresh basil. Add a glass straw and enjoy!
