Jicama Shrimp Wraps…you are going to love these! This was the find of the century for me! These jicama wraps are amazing. They are crunchy and moist have only 15 calories for two and taste amazing. This combo is particularly light and refreshing and would be oh so good with a couple of skinny margaritas!
Run, don’t walk, to Trader Joe to try these. I also recently found these at Sprouts. They are going to give lettuce wraps a run for their money! LOL
This particular dish also gets a lot of flavor and crunchy texture from my healthy coleslaw recipe. I’ve been making this for years and use it on tacos, as a side dish with a sandwich, on pulled pork sandwiches and even as a topping on burgers and hot dogs. It is lite and crunchy and has that whole sweet and vinegar thing going on but all good for you. I use sugar substitute in the dressing so this is a win win for me. Adding this as my topping on this shrimp wrap, just makes it a super healthy and super fast lunch option for me.
To pull these wraps together, grab the Healthy Coleslaw recipe and make up a batch. So easy. Then, assemble your ingredients. Have your cooked shrimp, sliced bell pepper (I use orange for the color and sweetness.), avocado that you’ve smashed with some salt and pepper and wraps ready to go.
The jicama wraps can be wet so I place them on a paper towel for a couple of seconds to absorb any excess liquid. Then, place one on a cutting board. Top with a heaping tablespoon of the smashed avocado and a couple of strips of the bell pepper. Sprinkle with salt and pepper. Add a couple of the cold, cooked shrimp and a nice heaping spoonful of the coleslaw. Fold up the jicama and dig in. The cool, crunch of the wrap, veggies and coleslaw is perfect against the creaminess of the avocado and sweetness of the shrimp. This is just so easy and so good. I typically serve three of these if I’m having for lunch. Put them out on a platter and let guests help themselves. Try this one, you won’t be sorry.
