Frozen Margarita
My Watermelon Agua Fresca is a summer favorite around here. Nothing but watermelon juice, fresh lime juice and some Lakanto monk fruit sugar substitute. It is light and refreshing and perfect to quench your thirst on a hot summer day. Serves with wedges of watermelon and lime, what’s not to love?
I make a lot of agua frescas in the summer. They are really just the essence of fruits and vegetables and not only delicious but good for you too. Try my Cucumber & Lime Agua Fresca too.
This is a really easy drink to make too. In a blender, simply add the watermelon chunks, water, lime juice and Lakanto monk fruit and blend on high until smooth. BTW, feel free to use another sugar substitute or real sugar if you prefer. I just really like Lakanto and the fact that there is no after taste. I eliminate added sugar but get great taste. That is a win-win for me.
Once smooth, I strain the liquid through a fine mesh strainer to remove the pulp. Discard the pulp and put the remaining liquid in a large pitcher. Refrigerate for at least two hours to get it really chilled.
Add ice to a glass, top with the beverage and garnish with the watermelon wedge and lime wheel and enjoy. Summer in a glass.
BTW, I strain this mixture to remove any of the solids but you can just keep the pulp in the drink… this is totally based on your preference.
This is such a pretty drink that it works great as a mocktail during happy hour and is perfect with brunch.

Watermelon Agua Fresca

Ingredients
- 4 Cups Ripe seedless watermelon, rind removed and cut into chunks
- 3 Cups Water
- 3 Tsp. Fresh lime juice from one large lime
- 1 Tbsp. Swerve or Lankato Monk fruit sugar substitute
- Lime slices and watermelon wedges to garnish, optional
Instructions
- In a blender, mix together the watermelon, water, the lime juice and the sugar substitute on high until smooth. Strain through a strainer into a large pitcher. This is optional. You do not have to strain. Refrigerate for at least two hours and up to 24 hours. Serve straight up or on ice garnished with slices of line and/or watermelon.
