Roasted Garlic and Parmesan Bread

This garlic bread gets an upgrade with the use of roasted garlic and Parmesan.

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper for easy clean up.
  • In a small cocotte, casserole dish or baking cup, and the garlic cloves and cover with olive oil. Pop in the oven covered and roast the garlic for 30 minutes. Carefully remove from the oven, uncover and let cool for 10 minutes.
  • Smash the garlic with a fork in the olive oil. If you have large pieces, remove the garlic cloves to a cutting board (keep the olive oil) and finely mince with salt and black pepper. (a pinch of both). Add the minced garlic back to the olive oil.
  • Take your roll or baguette and cut it in half lengthwise. Using a pastry brush, brush both halves of the bread with the garlic olive oil. Then, spread the minced garlic onto each slice. Sprinkle with more salt and pepper. Then sprinkle a teaspoon of Parmesan seasoning over each half of bread. Finish with the shredded or grated Parmesan cheese. Place in the oven until golden brown and the cheese is melted. About 15-20 minutes.
  • Slice each half into four pieces. Enjoy.
