I don’t know anyone that doesn’t love garlic bread. This elevated version, roasted garlic and Parmesan bread, has tons of Parmesan flavor with the use of cheese and an amazing Parmesan roasted garlic & chile seasoning I’ve been using on everything. Besides that yummy seasoning, I roast up garlic cloves in olive oil and then use both the finely minced garlic and the flavored olive oil to make the bread. It just doesn’t get any better.
You should start by roasting your garlic. I use five cloves but you can add more if you like. Put them in a small cocotte, mini casserole dish with a lid or a baking cup (just cover with foil). Top with a couple of tablespoons of olive oil. Roast in the oven for about 30 minutes until golden brown. Then, I simply let the oil cool and then smash the garlic. I’ve found it easier to remove the cloves of garlic from the oil and chop it with a little salt and pepper on a cutting board and then add it back to the oil. Mince it very fine.
One note about this garlic oil. You really need to use it as soon as you make it. Garlic sitting in oil can go bad fast and you can get ill. You can actually get botulism if the oil sits around too long. It should be refrigerated and used within four days. You really should make this oil and use it right away. Don’t let it sit around at room temperature for more than two hours. To be safe, I only make what I need for this recipe, use it right away when it is fresh and delicious, and then I never have to worry about this. I recommend you do the same.
Then, it comes down to the bread. Because I am making this garlic bread for just the two of us, I use a grider roll or a small baguette and each person gets a half. A garlic bread baguette is delicious on its own, but you can turn it into a sandwich too…just saying!!! You can use any bread you like or even a french roll. Brioche garlic bread is pretty good too. You can also easily make gluten-free garlic bread by choosing a gluten-free bread product. Sky is the limit. You decide. If you are making a full-sized loaf for the family, obviously double or triple the recipe to cover your bread and then use a full Italian loaf of bread.
I’ve used only Parmesan cheese in this recipe but you can easily substitute other cheeses or add additional cheese to this garlic bread recicpe. Some choices might be mozzarella, fontina and gouda.
I make these right in the oven but you can make this garlic bread without an oven. Simply pop this into a toaster oven. The small size is perfect for that and you won’t need to turn on the oven (especially in the summer.)
So, what to eat with garlic bread? Well, that’s easy. I serve this with my favorite Italian meals like Zucchini and Mushroom Meatballs, my Cauliflower Parmesan or my Spaghetti Squash with Seafood Marinara.

Roasted Garlic and Parmesan Bread

Ingredients
- 1 Grinder roll or small baguette, split in half
- 2 Tbsp. Olive oil
- 5 Garlic cloves
- 2 Tsp. Shawhan Farms Parmesan Inspirations Roasted Garlic & Chile
- ¼ Cup Parmesan cheese, shredded or grated
- Kosher salt and freshly ground black pepper
Instructions
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper for easy clean up.
- In a small cocotte, casserole dish or baking cup, and the garlic cloves and cover with olive oil. Pop in the oven covered and roast the garlic for 30 minutes. Carefully remove from the oven, uncover and let cool for 10 minutes.
- Smash the garlic with a fork in the olive oil. If you have large pieces, remove the garlic cloves to a cutting board (keep the olive oil) and finely mince with salt and black pepper. (a pinch of both). Add the minced garlic back to the olive oil.
- Take your roll or baguette and cut it in half lengthwise. Using a pastry brush, brush both halves of the bread with the garlic olive oil. Then, spread the minced garlic onto each slice. Sprinkle with more salt and pepper. Then sprinkle a teaspoon of Parmesan seasoning over each half of bread. Finish with the shredded or grated Parmesan cheese. Place in the oven until golden brown and the cheese is melted. About 15-20 minutes.
- Slice each half into four pieces. Enjoy.
