1 Cup Fat-free Greek yogurt (Fage is my fav!)
½ Cup Fresh berries of your choice
1 Tbsp. Lakanto monk fruit sugar substitute
½ Tsp. Pure Vanilla extract
1 Cup Lakanto Chocolate Melting Wafers
Pinch of flaky salt (Maldon is a fav)

1) Mix the yogurt, sugar and vanilla in a bowl. Add the berries of your choice and fold into the yogurt.

2) Using a tablespoon, drop heaping tablespoons of the yogurt and berry mixture onto a parchment lined baking sheet. Place in the freezer for ½ hour to freeze and set.

3) In a medium sized bowl, add the melting wafers. Melt them in the microwave in 15 second intervals until melted. Stir until smooth. Let cool for at least five minutes.

4) Remove the yogurt bites from the freezer and dip them into the chocolate and let the excess drip off. Place them back on the baking sheet and immediately sprinkle with flaky salt. When all have been dipped, place the baking sheet back in the freezer for at least 20 minutes to let the chocolate set. Remove from the refrigerator and enjoy. Place the frozen bites in a baggie or covered container in the freezer until ready to enjoy. Let them thaw on a plate for 10 minutes before enjoying.

NOTES: You are in for a delicious, sugar-free treat with my Chocolate Dipped Yogurt & Berry Bites. I’ve used plain, fat-free Greek yogurt (Fage is a favorite) and flavored it with a little pure vanilla extract and some Lakanto Monk Fruit Sugar substitute. In today’s preparation, I used raspberries, but any berry would work. Choose from blueberries, blackberries, or chopped strawberries. Just gently fold them into the yogurt and drop them on a baking sheet covered with parchment paper.

You’ll get about 6 mounds of yogurt. Pop in the freezer to harden (about ½ hour).

Then, melt the Lakanto Chocolate Melting Wafers (sugar-free) in the microwave in 15-second intervals, until melted. Stir until smooth. Let cook for at least 5-10 minutes so it does not “melt” the yogurt.

Dip each frozen yogurt bite into the chocolate and let the excess drip off. Immediately sprinkle with flaky salt (I use Maldon). The chocolate sets fast so do this right away.

Once done dipping all the yogurt bites, pop it into the freezer to set.

Once set, you can store these in the freezer in a container and then just have one when the urge strikes. I let them thaw for about 10 minutes before enjoying.

This is a guilt-free treat that I always have on hand. There is no added sugar, and you get some fresh fruit and protein in every bite. Enjoy.
