Jonathan’s Chocolate Chip Waffles recipe is a love note to my nephew! Such a nice guy. I got him a waffle maker for Christmas and wanted to whip up a wicked and decadent recipe he could make with his new “toy”.

I didn’t hold back (not sure this is still a breakfast item but definitely a winner for brunch or dessert!) There are plenty of topping options that just make this “fun food”. If you want to introduce cooking to someone, make it fun! I did sneak in my go-to Kodiak Cake mix so at least I know he’ll get plenty of protein. I used milk and nuts for even more healthy goodness and offered sugar substitutes to make this sugar free. No matter how he makes it or when he eats this, it is going to be good!

I personally use the Dash single serve waffle maker because it is small, easy to store and easy to use and clean. I got him a bigger model since…well, he’s a big guy! LOL I like Ghirardelli Dark Chocolate chips but any will do. Just use your favorite chips in this recipe. Don’t like some of the toppings? Want to add different ones? (maybe mini m&ms, berries, chocolate syrup?) Go right ahead and make this waffle feast your own.!

One very important note: putting chocolate chips in your waffle batter is “messy business”. They melt and get ooey gooey BUT they also melt all over your waffle maker making it more difficult to clean. Now, that has never stopped me from making them BUT another option for a quicker clean up is to make the waffle batter minus the chips. When the waffle is done, sprinkle with room temperature chips and they will soften right on top. You can also pop the waffles with the chips on top in a warm oven for a couple of minutes to really melt them. These are just options…they all work and they all taste great!

To get started, heat your waffle maker per the manufactures instructions.

Make your whipped cream. Whip the heavy cream and confectioners sugar or Swerve in a cold mixing bowl with a hand mixer until light and fluffy. Put in fridge until ready to use.

Mix the Kodiak Cakes Mix, milk and oil in a bowl. Gently fold in the chocolate chips. Your batter is now ready to use. I use really good chocolate chips by Ghirardelli but feel free to use the brand of your choice.

Spray your waffle maker with cooking spray and spoon in the waffle mix and cook your waffles.

To prepare your peanut butter , melt your choice of peanut butter in the microwave in a glass measuring cup for 30 seconds. Stir and heat another 10 -20 seconds until it is pourable.

Slice your banana.

Plate your cooked waffles and finish with your choice of toppings: sugar free or regular maple syrup, liquid peanut butter, whipped cream, chocolate chips, berries, nuts and/or banana slices. Finish with a dusting of confectioners sugar or Swerve confectioners sugar. Dig in!

For the rest of us, I’m thinking what a great idea for New Year’s Day Brunch! Put out a ton of different toppings and make two or three types of waffles like these and my Cornmeal-Chia Waffles with Maple and Blueberry Syrup (so good) and you’ll have a lot of happy guests. Enjoy.
