ingredients

8 Trader Joe’s jicama wraps

16 Cooked medium sized shrimp, shelled and deveined

1 Ripe Avocado, mashed with salt and pepper

½ Cup of Healthy Coleslaw

½ Orange bell pepper, sliced into small strips

DIRECTIONS

1. Put about ½ tablespoon of smashed avocado on the bottom of each wrap. Top with a couple of strips of bell pepper, two shrimp and a hefty tablespoon of my coleslaw (Get recipe here)

2. Serve with sliced lemon or lime (optional)

NOTE: This was the find of the century for me! These jicama wraps are amazing. They are crunchy and moist have only 15 calories for two and taste amazing. This combo is particularly light and refreshing and would be Oh So Good with a couple of margaritas.

Run, don’t walk, to Trader Joes to try these. I haven’t seen them anywhere else yet. But I have no doubt I will. They are amazing.
