You can actually make your own by adding pistachios to a food processor and letting it blend until it is completely broken down and turns into butter.
Pistachio cream, on the other hand, is a sweetened and flavored dessert spread, often containing added sugars, oils, and sometimes other ingredients like milk powders or white chocolate, resulting in a smoother, more luxurious, and dessert-like product. You could use either in this recipe, but I don’t want extra sugar or additives so I just use pistachio butter.

The beauty of these pistachio date energy balls lies in their adaptability. Don’t have pistachios on hand? Try cashews or walnuts instead. If pistachio butter isn’t available, almond butter or even tahini work beautifully. For the dates, Medjool dates are ideal for their soft texture and natural sweetness, but Deglet Noor dates work too – just soak them in warm water for 10 minutes if they’re particularly firm.
If you’re avoiding chocolate, try a drizzle of melted coconut butter or even a sprinkle of cacao nibs for that chocolate flavor without the added sweetness. The flaky sea salt can be replaced with any finishing salt you have, or even just a pinch of regular salt if that’s what’s in your pantry.
How to Make These Chocolate Pistachio Energy Bites
Creating these pistachio chocolate treats is surprisingly simple, and the results are absolutely stunning. If you don’t have small ice cube trays, don’t worry – you can easily form these into traditional balls and drizzle the toppings over them for an equally delicious result.
1. Prepare the base: Pit your dates carefully, removing any tough stem ends, and discard the pit and stem end. Then add the pitted dates to a food processor along with the almonds and pistachios. Process until the mixture comes together in a sticky paste that holds together when pressed. I always have to add a couple of tablespoons of cold water and process again until I achieve the right consistency.
2. Shape and mold: Divide the mixture into 15 equal portions and roll each into a small ball. Place each ball into the cavity of a small, 15-cavity silicone ice cube tray and press down firmly to create uniform shapes. This method gives you perfectly portioned bites that look bakery-professional.
3. Prepare the chocolate: Chop your dark chocolate into small, even pieces and place in a microwave-safe dish. Microwave in 15-second intervals, stirring between each interval, until the chocolate is completely melted and smooth – this should take about one minute total. Let it cool slightly before using.
4. Add the finishing touches: Top each molded date and nut cube with about 1/3 teaspoon of pistachio butter, spreading it gently if needed. Follow with approximately one teaspoon of the melted chocolate, then immediately sprinkle with flaky sea salt and top each bite with some chopped pistachios for extra crunch and visual appeal.
5. Set and enjoy: Refrigerate the tray for at least one hour to allow everything to set properly. For faster results, you can freeze them for about 30 minutes. Once set, pop the bites out of the tray and they’re ready to enjoy.

3) Store properly – Keep these energy bites refrigerated until ready to enjoy. They’ll maintain their shape and texture best when kept cold.
4) Freeze bites – To easily remove the bites from the ice cube tray, freeze them first. Then, you’ll be able to pop them out. If you don’t freeze them, the date-nut mixture is soft (like a caramel) and will change shape as you remove from the tray.

Date, Pistachio and Chocolate Bites

Ingredients
- 1/3 Cup pistachios, unsalted
- 1 ½ Cups dates, pitted (about 10 ounces)
- 1 Cup almonds, unsalted
- 3 Tbsp Pistachio butter
- 1/4 Cup Dark chocolate, melted (about 2-3 ounces)
- 2 – 3 Tbsp Pistachios,chopped
- Flaky Salt, Maldon is a favorite, optional
Instructions
- Pit your dates and add them to a food processor with the nuts. Process until it is well combined, then add two tablespoons of cold water and process until it comes together in a sticky ball.
- Divide the mixture into 15 small balls and place each ball into the cavity of a small, 15 cavity silicone ice cube tray. Press down with the back of a small spoon.
- Chop your chocolate and put in a small microwave safe dish. Microwave in 15 second intervals until melted and smooth. About one minute total. Let cool slightly.
- Top each date/nut cube with about a 1/3 teaspoon of the pistachio butter. Top that, with about a teaspoon of the melted chocolate. Immediately sprinkle with a little flaky salt (if using) and top each with some chopped pistachios.
- Refrigerate for at least an hour. Pop out the bites and enjoy. NOTE: to speed up the chocolate setting, put in the freezer until set - about 30 minutes. Then, keep in the refrigerator until ready to enjoy.
