No doubt about it, this is like getting a drink and dessert all in one glass. While the ice pop “garnish” is optional, it sure is fun. And, on a hot, sunny day, a welcomed treat. I was able to find Outshine watermelon frozen fruit bars at my grocery store. If you can’t find them, I don’t think anyone will complain if they are raspberry or cherry This Watermelon Rośe Slushy is a drink you’ll make all summer long. This is easy to make and quite delicious.
To make the cocktail, you’ll want to get your ingredients ready the night before. Cut your watermelon into chunks, place on a plate and put in the freezer to freeze up.
Pour your wine into an ice cube tray and freeze that overnight too.
A couple of notes: the wine won’t freeze rock hard since there is alcohol in it so don’t be alarmed. They will get nice and slushy when combined with the frozen watermelon and liquid wine you add.
When it comes to choosing your rośe wine, select one you like to drink. It doesn’t have to be an expensive bottle but it should be one that you enjoy on its own.
When it comes to the sugar, the amount used can vary greatly from person to person depending on how sweet you like your drinks and how sweet your watermelon is. So, as usual, taste and adjust as needed. I use Lakanto Monk Fruit sugar substitute or Swerve since I don’t like to add extra sugar but that is completely up to you.
I use fresh lime juice and will usually juice my limes the night before when I’m prepping my other ingredients. This way, I have everything ready to whip up my drinks when it is time. Using a juicer or an inexpensive hand-held manual citrus juicer, juice the limes and keep in a covered jar in the refrigerator until ready to serve.
I often get asked if you can use lemons. Sure! The flavor will be different but this is your cocktail so go ahead. I’ve used both and they both work just fine.
This is a great drink to make when entertaining. You can freeze all your watermelon, make your wine cubes and juice your limes the day before making this easy to pull togther when guests arrive. It also allows you to make fresh batches if everything is already frozen and ready to go. FYI: I’ve made batches of the fully frozen drinks and kept it in the freezer for a couple of hours. Then when my guests arrive, I just blend for a second to refresh the drink, pour and serve.
When it is time to serve, I prep my glasses. Oversized wine glasses, old fashioned ice cream soda glasses and hurricane glasses all work here. I rub a cut lime around the rim of each glass and dip that rim into a plate of sugar to rim the glass with that sugar. I slice limes or lemons and cut a small slit on one edge and place on the rim of the glass.
I have straws and tall ice cream spoons available in case the slushy is thick. Get out your trusty blender and add your ingredients. Blend until you get a nice slushy consistency (Hence, the name!) Pour into your prepped glasses. Unwrap a watermelon ice pop and plop right into the glass and serve right away. This is summer in a glass and a great way to kick off a BBQ, pool party or celebration. Watermelon Rose Slushy

Ingredients
- 1 Liter Rose` wine
- 3 Cups Watermelon, cut into chunks
- 2 Limes, one juiced and one cut into wheels
- 3 Tbsp. Confectioner’s sugar
- 1/4 Cup Granulated sugar
- 4 Outshine Real Fruit Watermelon frozen bars (optional)
Instructions
- Put cut watermelon on a baking sheet or large platter and freeze overnight.
- Pour one 1/2 bottle of rose wine into an ice cube tray and freeze overnight. Save the other half of rose` to prepare drinks.
- Prepare glasses by rubbing a lime wedge around the rim of the glasses. Pour granulated sugar onto a plate. Dip the rim of the glasses into the granulated sugar to coat.
- Blend the watermelon, frozen rose` wine, lime juice and confectioners sugar in a blender until mixed and slushy. You can add most or all of the remaining wine to the blender to make it the slushy consistency you like.
- Pour into prepared glasses about 3/4 the way full. Add a frozen watermelon ice pop and lime wheel to the glass and serve.
