Pomegranate Spritzer
The Pink Lady Cocktail is a classic drink. With just a couple of ingredients, it pays to use high quality gin and to make sure you use a very, very fresh egg white (the secret ingredient in this cocktail).
To get started, put two coupe glasses in the freezer to chill. Pour the gin and grenadine into a cocktail shaker, then fill with ice. Shake until the outside of the shaker feels ice-cold. (A full 2 minutes.) Strain the mixture into another empty shaker.
Next, put the egg white into the shaker and pour in the gin mixture. Shake really well until the egg white is frothy. You can do this in a blender for fast and easy results and then just pour.
I’ll often use the blender if making multiple cocktails – this recipe is easily doubled and tripled.
To serve, simply pour the cocktail into the prepared and chilled glasses. Add a maraschino cherry and lemon strip to your drink and enjoy.
