Filet Mignon with Mushroom and Cabernet Sauce

I love quesadillas and these easy and healthy chicken quesadillas are one of my go-to meals during the week. I can whip these up using ingredients I always have in the fridge: shredded chicken from a rotisserie chicken, shredded cheese, tortillas (the Ole Extreme Wellness Tortillas are a favorite because they are low calorie and low points for weight watchers members), fat free Greek yogurt, fat free salsa and avocado.
First, I saute the sliced onions in a large skillet coated with cooking spray for a couple of minutes until they are translucent and soft. Add them to a bowl with the shredded chicken. Add the seasonings (chili, onion and garlic powders, cumin, salt and black pepper) and toss to coat everything.
To make these, I simply place a tortilla in a large non-stick skillet that has been sprayed with cooking spray. On one half of the tortilla, I add some of my cheese (I like shredded cheddar cheese, but feel free to use your favorite melting cheeses or Mexican blends that you can find in the grocery store.) and top the cheese with some of the chicken and onion mixture. Top that with more cheese and fold over the other half of the tortilla.
Using a spatula, press down on the tortilla so the top sticks to the cheese and the bottom of the tortilla is pressed firmly on the skillet. You will have a half moon quesadilla. Let this cook for 3-5 minutes until golden brown on the bottom. Carefully flip it over and continue cooking for another 3-5 minutes until the second side is brown.
Put the cooked quesadilla on a cutting board and slice into wedges. I put these on a serving platter or plate and serve with yogurt, smashed avocado and fat free salsa.
Fat free Greek yogurt is an excellent substitute for sour cream and saves you a ton of calories with no saturated fat. You can also use low fat cheese to reduce calories and saturated fat further but I like my cheese and since the rest of the preparation is so lean, I usually use real cheese in all it’s glory! I recommend FAGE fat-free yogurt (love the taste) and the Ole Extreme Wellness, High Fiber Tortillas that are low in calories, high in fiber and have no sugar or hydrogenated oils added. If you are a weight watcher, they are only one point so they are a deal! Salsa is easy enough to make and you may want to try my kiwano salsa, kiwano guacamole and kiwano yogurt dip on the side too.

Easy and Healthy Chicken Quesadillas

Ingredients
- 8 Ole Extreme Wellness Tortillas
- 2 Cups of cooked, shredded chicken breast
- 2 Cups of Shredded Cheddar cheese
- ½ Sliced yellow onion
- ½ Tsp. Chili powder
- ½ Tsp. Onion powder
- ½ Tsp. Garlic powder
- ½ Tsp. Ground cumin
- 1 Tsp. Kosher sale
- ½ Tsp. Fresh ground black pepper
- Pam Cooking Spray
Instructions
- Mix all the seasonings in a small bowl and put to the side.
- Sautee the sliced onion in a pan sprayed with Pam Cooking spray until the onions are soft and wilted. Add to a bowl with the room temperature shredded chicken.
- Place one tortilla in a dry pan on the stove. On one half of the tortilla, spring 1/8 cup of cheese and top with ¼ cup of chicken/onion mixture and then another 1/8 cup of cheese.
- Fold the empty side of the tortilla over the mixture creating a half moon. Press down with a spatula and heat for 3-5 minutes until the tortilla is lightly browned. Carefully, flip the tortilla over to brown the other side and continue to melt the cheese and heat the chicken mixture through.
- If you are making these individually you can put them on a lined baking sheet and put into a 200-degree oven to keep them warm while making the other quesadillas.
