This is a light and healthy green salad filled with grapes, kiwi, cucumber and honeydew melon. Tossed in a honey mint dressing, it is a refreshing and delicious side dish.

Ingredients
 
 

  • 1 Cup Green grapes, cut in half
  • 1/2 Cucumber, peeled and sliced horizontally in half then sliced into half moons
  • 2 Kiwis, peeled and sliced
  • 2 Cups Honeydew melon, cut into chunks
  • 1 Tbsp. Fresh Mint, minced
  • 2 Tbsp. Honey
  • 2 Tbsp. Fresh lime juice
  • Pinch of Kosher salt

Instructions
 

  • Place all the cut fruit and vegetables in a large bowl.
  • Mix the honey, lime juice, mint and a pinch of salt in a small bowl. Pour over the fruit and veggies and gently toss until everything is coated. Refrigerate until ready to serve.
