This is a light and healthy green salad filled with grapes, kiwi, cucumber and honeydew melon. Tossed in a honey mint dressing, it is a refreshing and delicious side dish.
1/2Cucumber, peeled and sliced horizontally in half then sliced into half moons
2Kiwis, peeled and sliced
2CupsHoneydew melon, cut into chunks
1Tbsp.Fresh Mint, minced
2Tbsp.Honey
2Tbsp.Fresh lime juice
Pinchof Kosher salt
Instructions
Place all the cut fruit and vegetables in a large bowl.
Mix the honey, lime juice, mint and a pinch of salt in a small bowl. Pour over the fruit and veggies and gently toss until everything is coated. Refrigerate until ready to serve.
