Chocolate Dipped Yogurt & Berry Bites

You are in for a delicious, sugar-free treat with my Chocolate Dipped Yogurt & Berry Bites. I’ve used plain, fat-free Greek yogurt (Fage is a favorite) and flavored it with a little pure vanilla extract and some Lakanto Monk Fruit Sugar substitute. In today’s preparation, I used raspberries, but any berry would work. Choose from blueberries, blackberries, or chopped strawberries. Just gently fold them into the yogurt and drop them on a baking sheet covered with parchment paper.
Speaking of yogurt, you could use a flavored yogurt that is already sweetened (a low-carb/low-sugar option would be my choice) and just omit the sugar substitute and vanilla. That would make this recipe even easier to make with fewer ingredients. While I like to control my sugar intake, there are a couple of great sugar-free and carb-conscious brands like Chobani which has a zero sugar Greek Yogurt and Ralphs carries a carb-smart brand that I really like.
You’ll get about 6 mounds of yogurt. Pop in the freezer to harden (about ½ hour).
Then, melt the Lakanto Chocolate Melting Wafers (sugar-free) in the microwave in 15-second intervals, until melted. Stir until smooth. Let cook for at least 5-10 minutes so it does not “melt” the yogurt.
Dip each frozen yogurt bite into the chocolate and let the excess drip off. Immediately sprinkle with flaky salt (I use Maldon). The chocolate sets fast so do this right away.
Once done dipping all the yogurt bites, pop it into the freezer to set.
Once set, you can store these in the freezer in a container and then just have one when the urge strikes. I let them thaw for about 10-15 minutes before enjoying. This is a must for a creamy, easy to eat treat, so plan ahead.
This is a guilt-free treat that I always have on hand. There is no added sugar, and you get some fresh fruit and protein in every bite.
