Jicama Shrimp Wraps

For all those carb conscious eaters out there, jicama shrimp wraps give you veggies, protein and good fat while satisfying every taco craving you've ever had.

Ingredients
 
 

  • 8 Trader Joe’s jicama wraps
  • 16 Cooked medium sized shrimp, shelled and deveined
  • 1 Ripe Avocado, mashed with salt and pepper
  • ½ Cup of Healthy Coleslaw
  • ½ Orange bell pepper, sliced into small strips

Instructions
 

  • Put about ½ tablespoon of smashed avocado on the bottom of each wrap. Top with a couple of strips of bell pepper, two shrimp and a hefty tablespoon of my coleslaw (Get recipe here)
  •  Serve with sliced lemon or lime (optional)
