Clean, fresh, healthy and refreshing are what come to mind with this simple grated frozen peaches and cream dessert. It couldn’t be easier to make or more satisfying on a hot summer day. Don’t let the 8 hours to make this scare you – that’s just the time needed to freeze the peaches. After that, you’ll have this done in under 10 minutes. This no bake, no cook dessert is perfect for those lazy days of summer when you want something sweet, cool and satisfying. Peaches and cream is a classic flavor combo and one you’ll see not only in baked goods, but in frozen desserts like peaches and cream ice cream, this recipe, and in savory dishes too. This recipe is all about the peaches. You want really ripe peaches (soft to the touch and really fragrant) to freeze. They will freeze rock hard, but because they are so ripe, they will be really sweet when grated. When you grate a frozen peach, it is like a sorbet or granita in texture, but is all fruit. You want to grate the frozen peaches on a box grater and be ready to serve right away so the grated peaches are ice cold and still slightly frozen. Don’t worry if they start to thaw, they are still delicious. You’ll need about one frozen peach per person. Don’t peel or remove the pit before freezing. You’ll just grate the peach around the pit on all sides. I prefer throwing the peaches in the freezer overnight, but you can freeze for as little as 4-5 hours.
Then, for the fresh, chopped peaches, you’ll want peaches that are ripe and ready to eat, but they shouldn’t be as soft or overly ripe like the frozen ones. I just chop them into a small dice shape. Your two preparations of the peaches are now ready for this peaches and cream treat.
I made my own whipped cream for this recipe since the whole recipe is so easy. But, you could certainly use aerosol whipped cream (available in low fat and sugar free too), or a frozen dairy version of whipped cream or omit it completely. I use a sugar substitute when I make my whipped cream. No need for extra sugar in my diet and I prefer monk fruit (Lakanto Monk Fruit Sugar Substitute) or Swerve. Yes, you can use regular or sugar or omit it completely. You can use both granulated or powdered sugar, so use what you have on hand. Start with a small amount, and add until you have the sweetness you desire. I add pure vanilla extract to the mix which I think is critical in whipped cream. The flavor is amazing. TIPS FOR MAKING WHIPPED CREAM
. Chill the bowl and beaters from your hand mixer for 20-minutes before whipping.
. Don’t over whip the cream or you’ll get a butter like consistency. About 15 minutes should do it.
. An electric hand mixer is the right tool for this job. You could use a whisk if you are making small batches of whipped cream, but why? A hand mixer will make quick work of this task.
. Use the whipped cream as soon as it is made for the best results. If you have to hold it for awhile, add a little cornstarch to stabilize the mixture. Beat it for a few seconds before serving. In this recipe, I’d use about 1/2 – 1 teaspoon of cornstarch.
. Add pure vanilla extract for a fabulous flavor. Do not use imitation vanilla – yes, you can tell.
. For a change, and to emphasize the chopped almonds you use as a topping, you can substitute pure almond extract and create almond whipped cream. So delicious and a great alternative flavor profile. Almond whipped cream would make a fabulous topping for my Almond White Hot Chocolate too.
For a little crunch, I’ll chop up some slivered almonds and sprinkle those on top. But, that is optional, as are the mint sprigs I often use to garnish. You decide.
To pull this peaches and cream dessert together, simply spoon the grated frozen peaches into pretty coup glasses or dessert bowls. Scatter the fresh cut peaches around the frozen peaches. Top with the whipped cream and sprinkle with nuts if using and garnish with mint if using. Dig in and enjoy!

Grated Frozen Peaches and Cream

Ingredients
- 2 Overripe peaches, frozen with skin on and pit in
- 1 Fresh peach, chopped into small dice
- 1/2 Cup Heavy cream
- 1 ½ Tbsp. Lakanto or Swerve confectioners’ sugar substitute
- ½ Tsp. Pure vanilla extract
- 2 Tbsp. Chopped almond slivers (optional)
- Fresh mint, for garnish (optional)
Instructions
- Place the whole, overripe peaches (with the pit and skin on) in the freezer and freeze until solid overnight.
- Chill the beaters of a hand mixer and a bowl in the freezer for fifteen - twenty minutes. Then, beat the whipped cream, sugar substitute and vanilla until light a fluffy. Do this right before serving.
- Using a box grater, grate the peaches into dessert glasses and sprinkle with the chopped nuts. Add the chopped peaches around the edges of the grated peaches. Top with a dollop of the whipped cream and a mint leaf if using. Serve immediately and enjoy.
