ingredients
2 Cups Rotisserie Chicken, shredded
1 Small Celery stalk, chopped
1/2 Cup Raspberries
2 Tbsps. Cashews, chopped
2 Green onions, chopped
1 Large orange, juice and zest
2 Tbsp. Lite Mayonnaise
2 Tbsp. Fat Free Greek yogurt
Kosher Salt and Freshly ground black pepper to taste
DIRECTIONS
2. In a large bowl, mix the chicken, celery, and green onions. Add the dressing and toss to coat. Add the cashews and stir in. Taste. Season with salt and pepper to taste.
NOTE: The crunch from the cashews and the burst of juice from the raspberries make this a special chicken salad. The orange flavor mixed in with the tang of the yogurt is just so special in this salad. I love to eat it as is on a bed of lettuce but it also makes a great sandwich. It’s light and a much healthier version of the mayo heavy salads I’ve had in the past.
