Add the vanilla extract to the chocolate and stir to combine.  Next, add in your chopped pecans and mixed dried berries.  I pick up bags of mixed dried berries at Aldi but you certainly could use any berry you choose.  See my substitution ideas below.

This fast and easy white chocolate, pecan and berry bites candy recipe is perfect to make and gift during the holidays.

Ingredients
 
 

  • 12 Oz. White chocolate
  • 1 Cup Pecans, chopped
  • 1 Cup Dried mixed berries (or cranberries, cherries, raisins) 
  • 1 Tsp. Pure vanilla extract
  • Pinch Kosher salt
  • Flaky Salt (Maldon is a favorite) to finish (optional) 

Instructions
 

  • Add your chopped white chocolate or chips to a microwave safe bowl. Heat on medium-high heat in the microwave in 20-second intervals, stirring in between each round. Heat and stir until completely melted and smooth. (About 90 seconds – 2 minutes total).
  • Add the vanilla and stir. Then add the dried fruit, pecans, and pinch of salt to the chocolate and fold to combine. The mixture is really thick and ready to be scooped.
  • Using a small ice cream scoop, scoop the mixture onto a baking sheet lined with foil (for easy cleanup). Once you have all the bites formed, put in the refrigerator for one hour or overnight until completely chilled and set.
  • Place on a platter and serve. Enjoy!
