I love whipped ricotta (I actually love the texture of a lot of whipped cheeses – feta, cream, blue, etc.). It is light and fluffy and just perfect for a morning toast. I’ll often use different types of fruit on my toast and since it is cherry season, that is my fruit of choice today. My Whipped Ricotta Toast wit Cherries and Hot Honey is a favorite in the summer but be sure to try my Whipped Ricotta Toast with Berries & Honey too.
I switched this recipe up a bit, by using hot honey as a drizzle. You can always use just honey but the addition of chili flakes really wakes this whole toast up.
Here are a couple of tips to make this easy and super fast to pull together in the morning:
. Whip up your cheese mixture with a hand mixer the night before. You can even make a couple of batches so it is ready for several breakfasts during the week. Just put it in a covered container in the fridge until ready to use.
. You can also mix up your hot honey in advance and then just nuke it for a couple of seconds the morning you are assembling your toasts so it is easy to drizzle and nice and warm.
. Pitting cherries is made super easy if you use a cherry pitter. I invested a whole $10 a few years ago and it has proven to be a great investment plus it encourages me to make more fresh cherry dishes.
BUT these things should come with a warning label. LOL They “squirt and splash” cherry juice everywhere. So, I’ve learned to remove cherry pits in my kitchen sink. I but a large bowl in the sink and remove pits there so I have easy cleanup. It is a lot like opening a pomegranate only the cherries are much easier… but just as messy! (But they are so good, I don’t mind!)
The key to making these whipped ricotta toasts is to use great seasonal fruits so use whatever is in season. They are really east to make if you have a great piece of toast (sour dough is a favorite, as is a good crusty, seeded loaf of artisan bread). Just mix all the ingredients in a bowl, spread on your toast, top with the fruit and drizzle with the honey. Breakfast is done in under 5 minutes and is delish!

Whipped Ricotta Toast with Cherries and Hot Honey

Ingredients
- 1 Cup Lite ricotta cheese
- 1 Tbsp. Half and half
- 1 Tsp. Swerve or Lakanto monk fruit sugar substitute
- 1/2 Tsp. Pure Vanilla extract
- 2 Slices Crusty bread, toasted
- 3/4 Cups Fresh cherries, pitted and sliced in half
- 2 Tbsp. Honey
- 1/4 Tsp. Calabrian chili flakes
Instructions
- Make your hot honey by mixing the honey and Calabrian chili flakes in a small bowl. Heat for 10 seconds in the microwave and put to the side.
- Toast your bread.
- In a bowl, add the ricotta, half and half, swerve and vanilla. With a hand mixer, mix the cheese mixture until light and fluffy.
- Using a cherry pitter, pit the fresh cherries. Cut the cherries in half.
- Assemble your toasts. Slather each slice of toast with half of the cheese mixture. Top each toast with half of the cut cherries and drizzle each with the hot honey. Serve and enjoy!
