In a large bowl, add the chicken, onion, celery, almonds, tarragon and mayo. Stir everything to get to incorporate. Taste. Season with salt and pepper to taste.

Stir in the grapes.  Cover the bowl with plastic wrap and put in the refrigerator to chill for one hour.  This allows all the flavors to meld together and become absolutely yummy.

Once the salad is nicely chilled, simply slice the croissants in half diagonally and fill each with half the mixture. Top with the top half of the croissant. Serve with your favorite side and enjoy.

  • 2 Cooked chicken thighs, skin and bones removed and meat chopped (for convenience, use a rotisserie chicken)
  • 2 Green onions, chopped
  • 1 Large Celery stalk, chopped
  • 1/2 Cup Red grapes, cut in half
  • 2 Tbsp. Slivered almonds
  • 4 Tbsp. Mayonnaise
  • 1 Tbsp. Fresh tarragon, chopped
  • Kosher salt and freshly ground black pepper to taste
  • 2 Croissants

Instructions
