ingredients

4 Trimmed baby lamb chops

¼ Tsp. onion powder

¼ Tsp. garlic powder

Salt & Pepper

DIRECTIONS

1. Spray a grill pan with cooking spray and heat over a medium high heat.
2. Let your lamb chops come to room temperature. Dry them well with paper towels and season them liberally with the seasonings. This creates a nice crust on the outside.
3. Cook on both sides about 3 – 4 minutes for medium. I prefer my lamb a little more cooked than beef but if you like your lamb medium rare or well done, just adjust your cooking time. Serve two chops per person and enjoy.

NOTE: I love lamb chops and they are in regular rotation at my house. While I love sauces and different methods of cooking and serving lamb, a simple and easy lamb chop works really well all the time. I love to serve this with simply steamed veggies and a great potato or grain dish. Try these with my Fig, Almond and Mint Quinoa Salad. The pairing is great.
