Full-Fat Greek Yogurt: If you prefer richer frozen Greek yogurt bars, substitute full-fat Greek yogurt. Your protein ice cream will be creamier but higher in calories. If you don’t mind the fat, this full-fat yogurt also freezes better (it doesn’t get rock hard) and thaws more like traditional ice cream bars.
Real Sugar: Replace Lakanto with regular granulated sugar using a 1:1 ratio. Keep in mind this increases the calorie and carb count significantly.
Regular Chocolate: Instead of sugar-free melting wafers, use chopped dark chocolate or chocolate chips. You’ll need to add 1 teaspoon of coconut oil to achieve that smooth, glossy coating that makes professional-looking chocolate covered yogurt bars.
How to Make Frozen Greek Yogurt Bars
- Mix the Base: In a blender, combine 2 cups fat-free Greek yogurt, 2 tablespoons sour cream, 3 tablespoons Lakanto sweetener, and 1 teaspoon vanilla extract. blend until smooth and well combined.
- Add Fruit: Add in 1/2 cup of your chosen berries or fruit pieces and blend again. The mixture should look colorful and appealing.
- Fill Molds: Divide the mixture evenly between 4-6 popsicle molds, depending on size. Tap gently to remove air bubbles and ensure smooth frozen yogurt bars.
- Insert Sticks: If using wooden sticks, insert them now. For store-bought molds, follow manufacturer instructions.
- Initial Freeze: Freeze for at least 4 hours or until completely solid. These Greek yogurt protein ice cream bars need to be firm before dipping.
- Prepare Chocolate: Melt Lakanto chocolate wafers according to package directions. Pour the chocolate into a tall narrowish glass that will fit the pop when dipped. Let cool slightly but keep workable.
- Dip and Coat: Working quickly, remove each frozen Greek yogurt bar from its mold and dip into melted chocolate, allowing excess to drip off. Place on a parchment-lined tray. This is where my Weight Watcher friends can get real creative in an effort to save points or calories or macros if that is what you are watching. You can dip just half the bar in chocolate. Chocolate Dipped Frozen Greek Yogurt Bars

Ingredients
- 1 Cup fat-free Greek yogurt
- 1 1/2 Cups fresh berries of choice and cherries (Use any mixture of berries and cherries that you like. If using frozen, be sure they are thawed, drained and the pits are removed from the cherries.)
- 2 Tsp. Sour Cream
- 2 Tsp. Sugar Substitute (Lakanto Monk fruit is my choice)
- 1/2 Tsp. Pure Vanilla extract
- 2 Cups Lakanto sugar-free chocolate melting wafers (you can also use chocolate chips but add one teaspoon of coconut oil to the chips)
Instructions
- Add all ingredients to a blender except chocolate, and blend until smooth.
- Pour the mixture into the ice cream pop molds. (recipe makes 6 pops) Put in the freezer for four hours.
- Melt the chocolate in the microwave for about 2 minutes total (in 30 second intervals). Stir until smooth and let cool about 5 minutes. Pour into a Tall narrow glass (wide enough to fit the pop).
- Dip your frozen yogurt pops in the chocolate letting excess drip off. Place on a parchment lined baking sheet and put in the freeze for 5 minutes to set. Enjoy!
