Ingredient Substitutions

Berries and Fruit Variations: Try strawberries, blueberries, raspberries, blackberries, or mixed berry combinations. Diced peaches, mango chunks, or even mini chocolate chips work wonderfully too.

Full-Fat Greek Yogurt: If you prefer richer frozen Greek yogurt bars, substitute full-fat Greek yogurt. Your protein ice cream will be creamier but higher in calories.  If you don’t mind the fat, this full-fat yogurt also freezes better (it doesn’t get rock hard) and thaws more like traditional ice cream bars.

Real Sugar: Replace Lakanto with regular granulated sugar using a 1:1 ratio. Keep in mind this increases the calorie and carb count significantly.

Regular Chocolate: Instead of sugar-free melting wafers, use chopped dark chocolate or chocolate chips. You’ll need to add 1 teaspoon of coconut oil to achieve that smooth, glossy coating that makes professional-looking chocolate covered yogurt bars.

How to Make Frozen Greek Yogurt Bars

  1. Add Fruit: Add in 1/2 cup of your chosen berries or fruit pieces and blend again. The mixture should look colorful and appealing.

  1. Insert Sticks: If using wooden sticks, insert them now. For store-bought molds, follow manufacturer instructions.

  1. Initial Freeze: Freeze for at least 4 hours or until completely solid. These Greek yogurt protein ice cream bars need to be firm before dipping.
  1. Prepare Chocolate: Melt Lakanto chocolate wafers according to package directions. Pour the chocolate into a tall narrowish glass that will fit the pop when dipped.  Let cool slightly but keep workable.

  1. Dip and Coat: Working quickly, remove each frozen Greek yogurt bar from its mold and dip into melted chocolate, allowing excess to drip off. Place on a parchment-lined tray. If you want to add a little decorative finish like I did, just drizzle a tablespoon of chocolate over one side in a zigzag pattern.

  1. Final Freeze: Return chocolate-dipped bars to the freezer for 10-15 minutes until chocolate sets completely.

Weight Watcher Tip

This is where my Weight Watcher friends can get real creative in an effort to save points or calories or macros if that is what you are watching. You can dip just half the bar in chocolate. Want to cut even more? Just drizzle the chocolate on one side of the pop. I find one – two tablespoons of melted chocolate gives me just enough of the chocolate sweetness I crave, and I still get that chocolate coating that cracks (love that!). Want to still get a great treat at just one point, omit the chocolate coating completely. You decide.

Storage Instructions

Store your chocolate covered frozen Greek yogurt bars in an airtight container or wrapped individually in parchment paper and then stored in a plastic bag. They’ll keep in the freezer for up to 2 months, though they’re best enjoyed within the first month for optimal texture and flavor. Let them sit at room temperature for 2-3 minutes before eating if they become too hard.  NOTE;  fat-free ingredients freeze rock hard and don’t thaw like regular, full fat products.  You may have to let thaw longer. (5+ minutes).

Frequently Asked Questions.

A: Absolutely! They’re delicious as plain Greek yogurt ice cream bars. You can also roll them in chopped nuts or coconut for variety. Or to save points, just dip part of the bar in the melted chocolate, or if you want to be really good, just drizzle a tablespoon of chocolate over one side of the pop. My Weight Watcher friends get very creative when trying to save points!
A: The sour cream helps prevent ice crystals. Make sure you’re mixing thoroughly and using full-fat sour cream for best results. These pops need a little fat or they freeze rock hard and never thaw properly.
A: For best texture, freeze at least 4 hours for the initial set, and always let chocolate-dipped bars set for an additional 10-15 minutes.
A: Vanilla extract is preferred as vanilla paste or artificial vanilla can affect the freezing texture of your frozen Greek yogurt recipe.
