ingredients

½ Cup low fat ricotta cheese

1 Tbsp. heavy cream

½ Tsp. pure vanilla extract

1 Tsp. Swerve or Lakanto monk fruit confectioner’s sugar

2 Slices of good quality bread, toasted

½ Cup fresh mixed berries (or single berry of your choice)

1 Tbsp. honey

DIRECTIONS

1. Toast or grill the bread.

2. Put ricotta, heavy cream, sugar and vanilla in a bowl. With a hand mixer, beat the mixture until it is light and fluffy. (About 2 minutes)

3. Top the toast with about ¼ cup of the cheese mixture. Add the berries on top and drizzle with the honey. Enjoy!

NOTE:  My Whipped Ricotta Toast with Berries & Honey is in regular rotation at my house. Since I use low fat ricotta cheese and a sugar substitute in the recipe, I indulge a little with the tablespoon of heavy cream and honey. You can easily substitute skim, 1 percent or 2 percent milk in this for the heavy cream and omit the honey but why? OR if you want to go the other way, use full fat ricotta and regular confectioner’s sugar. Everything is interchangeable making this your choice! This is a great breakfast or brunch menu item, always looks good and always gets devoured.

They couldn’t be easier to make.  The key is a good quality bread.  A crusty fresh bread, Italian loaf or sour dough would all work here.  You are only having one slice, so make it a bread you’ll remember.  Don’t try to pile the ingredients on a plain piece of white toast.  That would be a disaster.  The weight of the ingredients will made the bread soggy and tear it.  Toast the bread in a toaster, under the broiler or on a grill pan.

Add your ricotta cheese, heavy cream (or milk of your choice), sugar substitute and vanilla into a bowl.  Using a hand mixer, beat the mixture until it is light and fluffy.  You won’t believe the difference whipping this cheese makes.  BTW, you could also use cottage cheese.  For all your cottage cheese haters (it is usually the texture that does it for you), whipping it completely transforms the cheese.  You could use fat-free or light cottage cheese here.  Do check out my Pineapple Cottage Cheese Pastry recipe.  This is an old Weight Watcher throwback recipe that still makes it to my breakfast table on a regular basis.

Simply divide in half and spread on the toast.  Top with the berries and drizzle with the honey.  It couldn’t be any easier.
