The crunch from the cashews and the burst of juice from the raspberries make this a special chicken salad. The orange flavor mixed in with the tang of the yogurt is just so special in this salad. I love to eat it as is on a bed of lettuce but it also makes a great sandwich. It’s light and a much healthier version of the mayo heavy salads I’ve had in the past.

Chicken, Raspberry & Orange Salad

Ingredients
- 2 Cups Rotisserie Chicken, shredded
- 1 Small Celery stalk, chopped
- 1/2 Cup Raspberries, chopped
- 2 Tbsps. Cashews, chopped
- 2 Green onions, chopped
- 1 Large Orange, juice and zest
- 2 Tbsp. Lite Mayonnaise
- 2 Tbsp. Fat Free Greek yogurt
- Kosher Salt and Freshly ground black pepper to taste
Instructions
- Make the dressing by mixing the mayonnaise, yogurt, zest of orange and orange juice in a small bowl.
- In a large bowl, mix the chicken, celery, and green onions. Add the dressing and toss to coat. Add the cashews and stir in. Taste. Season with salt and pepper to taste.
- Gently mix in the raspberries so that you aren’t smashing them.
- Chill the salad covered for at least 20 minutes in the fridge. Serve on a bed of lettuce or on the bread or roll of your choice. Enjoy!
