I’m a big fan of shrimp and I love pasta, so this shrimp, linguine & fresh tomato sauce recipe is in regular rotation around here. I make it using my Fresh Tomato Sauce with Basil. The whole meal comes together really fast and is absolutely delicious. Because there are so few ingredients, make sure you are using the best shrimp and the freshest tomatoes in your sauce. It will pay off in taste. There is always the debate about whether to add cheese to seafood dishes. I love cheese and add it to this pasta but you do not have to. You decide. Again, use the best cheese and grate or shave it right as you are serving it. This recipe is easily doubled or tripled for bigger parties.
Start by making the tomato sauce. This is a fast and easy sauce that you can make in fifteen minutes. Get the full recipe for fresh tomato sauce with basil and follow these instructions.
Simple heat a tablespoon of olive oil in a skillet over medium heat. Add chopped garlic and saute for about two minutes until soft and fragrant. Add three cups of fresh, chopped tomatoes, salt, pepper, oregano, and onion powder and stir. Cook until the tomatoes release all their juices and get soft. The liquid will create it’s own sauce. Cook for about 10 minutes, taste and adjust seasoning. Add the shrimp and cook for about 5 minutes until cooked through. Finish with some fresh torn basil leaves.
Meanwhile, cook the pasta per the instructions on the box. Make sure you cook your pasta in heavily salted water. You know the rule, it should taste like the sea! Drain the pasta in a colander and add to the saute pan with the tomato sauce and shrimp. Toss everything together to coat the pasta in the sauce.
Plate the pasta and shrimp in pasta bowls and top with more fresh basil leaves. If using, finish with grated or shaved Parmesan cheese. Enjoy.
