ingredients

1 cup of rolled oats
¾ cup of fat free Greek yogurt
½ cup of unsweetened applesauce
1 egg
¼ cup of skim milk
1 Tsp. vanilla extract
1 Tsp. cinnamon
½ Tsp. nutmeg
1 Tbsp. Chia seeds, Hemp Seeds or Ground Flaxseed (your choice)
1 Tbsp. Lakanto Sweetener

Optional ingredients (depending on what you are craving):
Land O Lakes Light Butter
Sugar Free Pancake Syrup (I like Maple Grove Farms.), honey or Maple Syrup

Blueberries, blackberries or the berries of your choice

DIRECTIONS

1. Add everything to a blender and let it rip! Scrape down the sides as needed.
2 . I spray a pan with Pam and/or add a Tbsp. of Land ‘O Lakes light butter (if my jeans are feeling loose) and heat. Once hot, I had heaping spoons of the batter to the pan making 8 pancakes. Cook until lightly browned then flip and finish cooking on other side.
NOTES: I serve four pancakes per person topped with warmed sugar free syrup and berries. (I just heat the syrup and berries in the microwave in a measuring glass cup for easy pouring. 1 minute should do it.) Depending on what is in season, I’ll use blueberries in the warmed syrup and serve other fresh berries or melon on the side. I also like to serve this with a couple of grilled Canadian bacon slices. (99% fat free). This makes a healthy, filling breakfast that will take you through your workout, workday and right through to lunch!
