Cucumber and Lime Agua Fresca is such a refreshing drink and such a great way to add a vegetable and more water into your daily intake. This was inspired by those big pitchers of water with slices of cucumber you see at the spa. I always loved that before and after a treatment! The addition of lime and some Lankanto sugar substitute makes it such a great “mocktail” for guests that don’t drink alcohol too. Note: feel free to use a different sugar substitute or the real thing. I like the taste of this product and am always looking for ways to remove excess sugar from my diet so this is a win-win for me.
The color is beautiful and you can whip this up the day before serving. Just keep in the refrigerator until ready to serve. FYI: don’t dilute the beverage with ice while chilling. Just pour over ice when serving to get the full, delicious flavor of the drink.

This is a simple drink to make. Simply add the peeled and cut chunks of cucumber, lime juice and three tablespoons of the sweetener of your choice to a blender and mix until smooth.
I like to strain the mixture through a mesh strainer into a large measuring cup. You should get about two cups of juice. Pour into a pitcher and add the water. Be sure to taste and adjust sweetness. Chill until ready to serve.
I like to garnish with a wheel of lime. You are going to love this. It works great as a mocktail for guests who are refraining from alcohol.

Cucumber & Lime Agua Fresca

Ingredients
- 4 Cups Water, or to taste
- 3 Cucumbers, peeled and chopped
- ½ Cup Freshly squeezed lime juice (about 4-5 limes)
- 3-5 Tbsp. Swerve or Lankato Monk fruit sugar substitute
- Slices of Lime and Cucumber to garnish (optional)
Instructions
- Blend cucumbers, lime juice, and 3 tablespoons sweetener together in a blender until smooth.
- Strain into a large measuring cup. You’ll have about 2 cups of cucumber and lime juice. Pour into a pitcher and add the remaining water. Taste. Add additional sweetener if needed. Chill until ice cold and serve straight up or over ice with slices of lime and or cucumber.
