The Ultimate Cottage Cheese Flatbread: A 2-Ingredient Wonder That’s Taking Over The Internet
Today I’m absolutely thrilled to share what might be the most exciting food trend I’ve discovered this year – the viral cottage cheese flatbread that’s been taking social media by storm! With just 2 ingredients as your base, this protein-packed, low-carb alternative to traditional bread has completely changed my meal prep game. FULL DISCLOSURE: sometimes I use a third ingredient and I always add seasoning…didn’t want to mislead you!
Cottage cheese is definitely having its moment, and with good reason. It is packed with protein, low on calories, has a mild taste and is an amazing substitute for lots of things. In the last six months alone, I’ve made cottage cheese cake, pineapple cottage cheese pastry, cottage cheese pancakes and cottage cheese bread with oatmeal! Come on, it is a game changer!
Why You’ll Fall in Love with Cottage Cheese Flatbread
When the viral cottage cheese flatbread first appeared on my feed, I was skeptical. Could something so simple actually taste good and hold together? Let me tell you – it exceeded all my expectations! Here’s why this 2-ingredient cottage cheese flatbread deserves a spot in your recipe collection:
- Protein Powerhouse: Each flatbread packs around 18g of protein – perfect for fitness enthusiasts and those looking to increase their protein intake!
- Low Carb & Gluten-Free: No flour needed, making this ideal for keto and gluten-sensitive folks (see my notes below)
- Incredibly Versatile: Use it for wraps, sandwiches, or my personal favorite – cottage cheese flatbread pizza!
- Budget-Friendly: Just cottage cheese and eggs as your base ingredients
If you’re tired of expensive protein breads or complicated gluten-free recipes, this 2-ingredient cottage cheese bread alternative will change everything!
The Basic Recipe: 2-Ingredient Cottage Cheese Flatbread
Ingredients:
- 1 cup cottage cheese (2% or 4% works best)
- 2 eggs
- Seasonings of choice (optional but recommended)
- Optional: one tablespoon of Kodiak Power Cakes Flapjack & Waffle Mix
PRO TIP FOR MAKING COTTAGE CHEESE FLATBREAD WITH FAT-FREE COTTAGE CHEESE:
I like to use fat-free cottage cheese. I personally try to limit my saturated fats so that is the product of my choosing. If I add just a tablespoon of the the Kodiak high protein mix to the batter, it hold together so much better and gives me the texture I like. This is totally optional. I have used fat-free cottage cheese without the Kodiak mix and just bake it a little longer so it sets up better. This is a personal choice. This is a high protein product and I have no problem with adding this small amount of flour to my mix – my choice. For my Weight Watcher friends, that adds zero points to the flatbread which is already zero and I getting a consistency that works better for my sandwiches and flatbread pizzas. Try it!
How to make cottage cheese flatbread:
- Preheat your oven to 375 degrees F and line a baking sheet with parchment paper.
- Blend cottage cheese and eggs in a food processor or blender until completely smooth.
- Season your mixture with your favorite herbs and spices (I’ll share my favorite combinations below!).
- Spread the mixture onto your parchment-lined baking sheet, forming an 8×10 inch rectangle. Keep the thickness uniform, especially at the edges.
- Bake for 25-30 minutes until golden brown and firm to the touch.
- Cool for at least 5 minutes before using.
Pro Tips for Perfect Flatbread:
- Don’t spread the mixture too thin, especially at the edges
- Let it cool completely before handling to prevent breaking
- Parchment paper is non-negotiable – it prevents sticking and makes removal easy
Once your flatbread has cooled, put it on a cutting board and cut use as you like. If I’m making sandwiches, I typically get two sandwiches out of one flatbread.
I simply cut the bread into four equal pieces. NOTE: I like the “rustic” look and don’t bother with trimming edges. I just cut and make my sandwiches. BUT, you could always trim the edges making perfectly straight lines and measure to be sure you have “perfect” squares. That’s not my “thing” here, but you do you!
I assemble my sandwiches with all my favorite cold cuts and toppings and I’m good to go. To bread, just pure protein.
