Ingredients
 
 

  • 2 Ripe bananas
  • ¾ Cup Fat-free Greek yogurt (Fage is a favorite)
  • ¼ Cup Unsweetened almond milk
  • 2 Tbsp. Peanut Butter (smooth or chunky)
  • 10 Oz. Lakanto Sugar-free Chocolate Melting Wafers Or melting wafers, chocolate chips or chopped chocolate of your choice
  • 4 Tsp. Peanuts, chopped

Instructions
 

  • Break the bananas into chunks and add to a blender with the yogurt, almond milk and peanut butter. Blend until smooth – about 1 minute.
  • Carefully pour into four ice cream pop molds and insert the pop sticks. Freeze for at least four hours.
  • In a microwave safe measuring cup, melt the melting wafers in 30 second intervals until completely smooth. Stir in between each interval.
  • Pour the chocolate into a tall glass that is wide enough to insert the frozen pops. Let the chocolate cool for a couple of minutes.
  • In a small food processor, blend the nuts until finely chopped. Alternatively, chop with a knife.
  • Dip the frozen yogurt pop into the chocolate to cover completely. Let the excess drip off. Immediately sprinkle with a teaspoon of the peanuts and a pinch of flaky salt. Place the covered bar on a plate covered with parchment paper. Place back in the freezer for 5-10 minutes to set. Alternatively, you can just dip the pops halfway into the chocolate. The added nuts and salt are optional but delish! Serve and enjoy.
