PRO TIP FOR MAKING COTTAGE CHEESE FLATBREAD WITH FAT-FREE COTTAGE CHEESE: 

I like to use fat-free cottage cheese.  I personally try to limit my saturated fats so that is the product of my choosing.  If I add just a tablespoon of the the Kodiak high protein mix to the batter, it hold together so much better and gives me the texture I like.  This is totally optional.  I have used fat-free cottage cheese without the Kodiak mix and just bake it a little longer so it sets up better.  This is a personal choice.  This is a high protein product and I have no problem with adding this small amount of flour to my mix – my choice.  For my Weight Watcher friends, that adds zero points to the flatbread which is already zero and I getting a consistency that works better for my sandwiches and flatbread pizzas.  Try it!

  • Spread the mixture onto your parchment-lined baking sheet, forming an 8×10 inch rectangle. Keep the thickness uniform, especially at the edges.

I simply cut the bread into four equal pieces.  NOTE:  I like the “rustic” look and don’t bother with trimming edges.  I just cut and make my sandwiches.  BUT, you could always trim the edges making perfectly straight lines and measure to be sure you have “perfect” squares.  That’s not my “thing” here, but you do you!
