ravioli cooking in brown butter sauce.
A: Best used immediately. Can be refrigerated for 3-4 days and gently reheated.
A: It’s best fresh, but you can prepare components in advance and quickly finish the sauce before serving. I wouldn’t, but you can.
A: It’s rich and indulgent. Enjoy in moderation as part of a balanced diet. I can’t say there is anything healthy here.  I do often substitute a sugar-free syrup for the maple syrup to eliminate extra sugar but I definitely consider this a treat.
A: Not recommended. The milk solids and herbs don’t freeze well.  Don’t go there!
A: Brown butter includes the caramelized milk solids; clarified butter removes them.

Ingredients

  • 3 Oz. Unsalted butter
  • 6-8 Fresh sage leaves
  • 1/8 Tsp. Calabrian chili flakes
  • 1 Garlic clove, finely minced
  • 1 Tbsp. heavy cream
  • 1 1/2 Tbsp. Pure maple syrup
  • 1/4 Tsp. Kosher salt, to taste
  • ¼ Tsp. Freshly grated nutmeg

Instructions

  • Melt the butter in a large skillet over medium-low heat. Add the fresh sage leaves and red pepper flakes. Cook stirring occasionally, until the butter browns and starts to smell toasted, about 4 minutes. Add the garlic and cream, and bring the mixture to a boil. Remove from the heat, then stir in the maple syrup. Season with salt to taste and grate the nutmeg on top. Stir. Taste again and adjust seasoning if needed.
  • If serving with ravioli, add the cooked and drained ravioli to the skillet and gently coat the ravioli in the butter sauce. Plate in two bowls and enjoy.
