Creating these beautiful parfait desserts is easier than you might think! Start by preparing your kiwi. I cut off the tough ends, then cut each kiwi in half. Using a grapefruit spoon (one of the greatest tools in my kitchen), I cut the kiwi away from the skin. I discard the skin and then slice the red kiwi, golden kiwi, and green kiwi into dice.
In clear glasses or jars, begin with a layer of vanilla Greek yogurt, followed by your green kiwi slices. Add another layer of yogurt, then your golden kiwi, more yogurt, and finally your red kiwi on top. (I save the best for last!) Sprinkle chopped pistachios over each layer, or just add one layer…the choice is yours. The key to stunning cheesecake parfait-style layering is to use a spoon to gently press each layer against the glass for clean lines and to make sure the different layers of fruit are easily seen from the sides (It is a presentation thing, and definitely not necessary but Oh so pretty!)

Tri-Color Kiwi Greek Yogurt Dessert Parfaits

Ingredients
- 12 Oz. Vanilla flavored Greek yogurt
- 2 Green Kiwi
- 2 Sungold Kiwi
- 2 Red Kiwi
- 2 Tbsp. Pistachios, chopped
Instructions
- Peel your kiwis and cut into small dice.
- In two small parfait glasses, spoon 2 ounces of the vanilla yogurt into each glass. Top with a layer of the green kiwi. Top with two more ounces of yogurt and top with the chopped yellow kiwi. Add the final 2 ounces of yogurt to each glass. Top each with a tablespoon of the chopped pistachios and finish with the red kiwi on top.
