ingredients
1/2 Cup Sweet & Spicy Plum Hoisin Sauce (recipe here)
8 – 12 Oz. Boneless rib eye steak, thinly cut
1 Cup Healthy coleslaw (recipe here)
4 Spinach tortillas
1 Tbsp. Olive oil
Kosher salt and freshly ground black pepper to taste
DIRECTIONS
1. NOTE: prep and cook time does not include the making of the sauce or coleslaw. See those recipes for the timing. (Don’t be alarmed… both are fast and easy.)
2. Heat your tortillas on the stove or on a grill. I also found this great tortilla warmer at my local grocery store. It is like a big, fabric potholder that holds your tortillas. You put your tortillas in the holder and microwave for 30 seconds. They are hot and ready to go. Of course, you don’t get those great grill marks but if I’m at home and there is no grill in sight, this is a good option.
3. Heat your plum hoisin sauce. Put it in the microwave for a minute until really hot (stir once).
NOTE: This recipe combines some of my favorite things: my healthy coleslaw (which I use as a side dish, on top of sandwiches and on my tacos) and my Sweet and Spicy Plum Hoisin Sauce which I use a a sauce, glaze and in this case as a great spread in my taco.
I love that I can bring all these recipes together in this one taco dish and boy is it good! I can make the sauce and coleslaw days in advance and pull this together in minutes anytime I like. I’ve used Spinach tortillas here but any of your favorite tortillas will work – corn or flour.
