Instructions
Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.
In a standing mixer (or a large bowl using a hand mixer), beat together the butter, Swerve brown and granulated sugars, vanilla, and egg until combined. Add the whole wheat flour, all purpose flour, flax seed, oats, baking soda, baking powder, salt, cinnamon and nutmeg. Mix until combined. Using a spatula, fold in the raisins.
Now that the dough is made, use a tiny ice cream scoop (1/2 tablespoon) and scoop out tiny mounds of the dough and place them on the prepared baking sheets.
Bake each tray of cookies for 18-20 minutes until golden and cooked through. Let them cool completely before pouring into a bowl and adding milk and your favorite fruit. Don’t forget the spoon! Enjoy!
