1/2CupGranulated monk fruit or sugar substitute of your choice
1/4CupEngland’s Best 100% Liquid Egg Whites
1Tsp.Clementine or Orange zest
1Tsp.Pure vanilla extract
1/4CupAlmond slices
1/4CupDried tart cherries
Instructions
Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper and set aside.
Using a hand mixer, combine the sugar and butter in a bowl, beating until light and fluffy. (about 3 minutes)
Add the egg whites, vanilla and clementine or orange zest.
In a separate bowl, combine the flour, oats, cinnamon, salt and baking soda.
Fold the dry mix into the wet mix and combine completely. Add the cherries and almonds and fold to combine.
Use an ice cream scoop for cookies that are the same size. Form the dough into small balls and place on the baking sheet. Bake in the oven for 10 minutes.
Let the cookies cool for 5 minutes and then transfer them onto a rack to cool completely. Enjoy!
