ingredients
8 Thin slices of prosciutto
1 Medium zucchini
Kosher salt and freshly ground black pepper
Cooking Spray
Mango Vinegar (recipe here)
DIRECTIONS
1. Trim the ends from the zucchini and cut in half diagonally and then cut each half horizontally into quarters giving you a total of 8 zucchini spears. Season with salt and pepper. Wrap each piece tightly in a piece of prosciutto.
2. Spray a baking sheet with cooking spray. Add the zucchini and put under the broiler until the prosciutto is crispy but the zucchini is still firm, about 5 minutes. Flip a couple of times to be sure they don’t burn. The prosciutto should be crispy and the zucchini brown in spots. Place them on a plate.
3. Drizzle the Mango vinegar around the wrapped zucchini and serve warm.
NOTE: This is a super easy and simple recipe to make and serves as a fabulous appetizer or side dish. I adapted this from an old Michael Chiarello recipe and would up cooking it differently (under the broiler). The zucchini can be cut, seasoned and wrapped in prosciutto and kept in the fridge until you are ready to broil them making this a really fast appetizer.
The mango vinegar can be made way in advance and is great on a variety of things but it works fabulously here. Try it.
