ingredients

4 Cups ripe, seedless watermelon, rind removed and cut into chunks

3 Cups water

3 Tsp. fresh lime juice, from one large lime

1 Tbsp. Swerve or Lankato Monk fruit sugar substitute

Lime slices and watermelon wedges (to garnish, optional)

DIRECTIONS

1. In a blender, mix together the watermelon, water, the lime juice and the sugar substitute on high until smooth. Strain through a strainer into a large pitcher.  This is optional.  You do not have to strain.   Refrigerate for at least two hours and up to 24 hours.  Serve straight up or on ice garnished with slices of line and/or watermelon.

NOTES:  You can strain this mixture to remove any of the solids or just keep it… this is totally based on your preference.  This is such a pretty drink that it works great as a mocktail during happy hour and is perfect with brunch.  If you like this recipe, be sure to try my Cucumber-Lime Agua Fresca too.  Better yet, sign up for newsletters and have them sent right to your inbox.  Enjoy.
