ingredients

2 Slices Angel Food Cake, cut into small dice
8-10 Fresh strawberries, diced
1 Tsp. Granulated sugar
1/2 Cup Heavy cream
1 Tbsp. Confectioner’s sugar plus more to finish
1/2 Tsp. Pure Vanilla extract

DIRECTIONS

1) Place your dices strawberries into a small bowl and top with the granulated sugar. Toss to coat. Let this sit on the kitchen counter for 1 hour to overnight to let the juices flow and a syrup to form.

2) Make your whipped cream. In a chilled bowl, beat the heavy cream and confectioner’s sugar with a hand mixer until slightly stiff peaks form.

3) In two small dessert bowls, cups or glasses, add a tablespoon of the fruit. Top with half the cake cubes. Top that with a tablespoon of the strawberries. Top with the remaining cake cubes and top with more fresh strawberries and cream.

4) Using your confectioner’s sugar shaker, dust the desserts with powdered sugar and enjoy.

NOTE: These mini strawberries and cream parfaits are perfect for special occasions, holidays and look fabulous on a dessert bar. Use pretty little bowls, glasses or cups to create the parfait. These are easy to make and take only minutes to pull together. This dessert impresses with very little effort.

Strawberries and cream is a classic combo and I use it in lots of desserts.  This dessert takes a little help from store-bought angel food cake and saves a ton of time.  But, you could also make this with cubes of store-bought pound cake or donuts would work too.  You won’t hurt my feelings if you make your own cake!

I make my own whipped cream but you could certainly make this even easier by using the whipped cream that comes in the aerosol cans in the dairy section of your grocery store.  Yes, you can use dairy whipped topping from the freezer section, but that is not my favorite thing in the world.  There is nothing like homemade whipped cream and since it only takes a couple of minutes, why not make it yourself!

Strawberries and cream might be the classic but I love all kinds of berries so feel free to substitute raspberries, bluberries and black berries in these mini parfait cups.  Berries and cream desserts are particularly great during the summer months when berries are at peak season.

Because this dessert is so simple to prepare and so beautiful to look at, I love to serve it in a special bowl, or glass.  If you are layering it, it looks great in a clear glass.  If it is for a special occassion, you might try themed bowls, mugs or glasses.  You decide how special the presentation is going to be.
