4 cloves garlic, crushed

2 Tbsp. butter

2 Tbsp. extra-virgin olive oil

1 loaf crusty bread, split

3 Tbsp. grated Parmigiano cheese

Chopped fresh parsley


1. Combine the garlic, butter, and oil in a microwave safe dish. Heat garlic and butter and oil in microwave for 1 minute.
2. Toast split bread under the broiler in the oven. Remove bread when it is toasted golden brown in color. (2-4 minutes) Brush bread liberally with garlic mixture. Sprinkle with the cheese and return to broiler and brown 30 seconds. Top with chopped parsley and cut into hearty slices and serve.
NOTE: If I’m entertaining a group and want to get a jump on dinner preparation, I’ll prepare the garlic mixture brush it on the cut sides of the bread and top with the cheese. Close the loaf and wrap it in tin foil. I can pop this into the oven about 20 minutes before dinner is ready to serve. I remove from the loaf from the oven, remove foil, cut into wedges and top with chopped parsley. This is a winner every time.
