ingredients

4 cups water, or to taste

3 Cucumbers, peeled and chopped

½ Cup freshly squeezed lime juice (about 4-5 limes)

3-5 Tbsp. Swerve or Lankato Monk fruit sugar substitute

Slices of Lime and Cucumber to garnish (optional)

DIRECTIONS

1. Blend cucumbers, lime juice, and 3 tablespoons sweetener together in a blender until smooth.

2. Strain into a large measuring cup.  You’ll have about 2 cups of cucumber and lime juice.  Pour into a pitcher and add the remaining water. Taste. Add additional sweetener if needed.  Chill until ice cold and serve straight up or over ice with slices of lime and or cucumber.

NOTES:  This is such a refreshing drink and such a great way to a vegetable and more water into your rotation.  This was inspired by those big pitchers of water with slices of cucumber you see at the spa.  I always loved that before and after a treatment!  The addition of lime and some sugar substitute makes it such a great “mocktail” for guests that don’t drink alcohol too.  The color is beautiful and you can whip this up the day before serving.  Enjoy!
